Paleo Diet/AIP Diet Acceptable Food # 12: VEGETABLES

As a child many of us grew up not enjoying our vegetables. This stigma may have been created by friends, family, media or other influences. By following the Paleo or AIP Diet we have the opportunity to help erase the stigma that may have haunted us as children. Vegetables aren’t only good for us but they taste good! Early and repetitive exposure to vegetables will help our children have a lastly love for vegetables. Paleo, AIP, or other diet followers can always benefit from an increased amount of vegetables in their diet. Paleo Mom encourages between 8-14 cups per day…that’s a lot of vegetables!

Why does it matter so much that we consume so many vegetables on the AIP and Paleo diet? In a nut shell they contain antioxidants, dietary fiber, minerals, vitamins, and more. Let’s briefly go over each:

Antioxidants

Dark green vegetables have lots of phenolic flavonoid antioxidants and minerals. Bones, teeth, and vital organs can suffer if the antioxidants, vitamins, and minerals contained in vegetables aren’t at acceptable levels. Another big one, particularly for the AIP diet crowd, is that antioxidants boost our body’s immunity. Lastly, leafy greens have a bioflavonoid known as quercetin that functions as an anti-inflammatory.

Dietary Fiber

If you are looking to keep your digestive tract in amazing shape then the dietary fiber in vegetables is for you! Vegetables have both soluble and insoluble fiber or non-starch polysaccharides which absorbs extra water in the colon.

Minerals & Vitamins

Leafy greens are high in magnesium with a low glycemic index which helps fight against the nation’s norm. Green vegetables are also very rich in iron and calcium which helps red blood cells carry oxygen and build bones respectively.

Of course, there are many, many more benefits of consuming vegetables which are beneficial to those living the paleo and AIP diet that can’t be covered here. Overall, as we increase the amount of vegetables in our diet we natural help our bodies perform their proper functions.
